Roberto,
It depends on the model but usually, the initial temperatures are
set in the Derivatives tab of the proforma, one temperature for each node.
Also make sure that you correctly fill in the field on the Derivatives
tab that usually asks about how many nodes there are in the tank.

I´m woirking with fluid storage tanks, for a solar heating system for
residential buildings. My system simulates quite well, but i still have
a small problem. How can I set the initial temperature of a storage tank?
In my simulations it starts always at 0ºC so it doesn´t work as it should
for the first 2-3 days.
any help would be appreciated.
